olive oil cooking spray
2 carrots, grated
1 cup grated sweet potato
1 red onion, diced
1 cup frozen peas
2 cloves garlic
1 tsp extra virgin olive oil
5 free-range eggs, lightly beaten
1 tsp dried or fresh thyme



Set oven to 180 degrees Celsius. Lightly spray a 23 cm pie dish with cooking oil. Place all ingredients in a large bowl and mix to combine well. Pour into a pie dish and bake for 40-45 minutes, or until lightly browned and cooked in the centre. Cut into wedges, add salt & pepper if desired and serve with a green salad.
