Quinoa Sweet Potato Soup

  • 1 cup quinoa
  • 1  tbsp olive oil
  • 200g flat pancetta, thickly sliced
  • 1 brown onion, chopped
  • 2 garlic cloves, crushed
  • 800g sweet potato, chopped
  • 1 tsp dried chilli flakes
  • 1.5 litres chicken stock
  • 2 cups baby spinach leaves
  • coriander leaves to serve

 

Soak quinoa in 1 1/2 cups of cold water for 15 minutes. Drain and set aside. Heat oil in a saucepan over medium heat. Add pancetta and cook for 4 minutes or until golden. Add the onion and garlic and cook for 4 mins or until softened. Add sett potato, chilli and chicken stock. Increase heat to high and bring to the boil. Add quinoa and cook for 15 mins or until sweet potato is tender and quinoa is cooked. Add spinach leaves and stir to combine. Top with coriander to serve.
