Spiced Chicken with Quinoa

Spiced chicken quinoaIngredients
·         4 chicken breasts, diced
·         2 cups quinoa
·         1 tbsp coconut oil
·         1 tbsp Persian spice
·         1 large brown onion
·         1 clove garlic, crushed
·         1200ml chicken stock
·         8 dates pitted & cut in half
·         50g toasted almonds
·         Coriander, garnish

Method
Coat the chicken in spices & set aside. In a large saucepan, heat coconut oil, add onion, garlic & cook until soft 3-5 mins. Add the chicken, until cooked, browned. Add 500ml of stock & dates & allow to simmer until chicken is tender, 10-15 mins. Add quinoa & remaining stock until the stock is absorbed & quinoa tender, 10-15 mins. Serve & garnish with toasted almonds & coriander.
Serves 4.
